Clean Eating Update

I usually do my grocery shopping on Thursday so that is when I set up my clean eating.  I bought enough fruit and greens to make enough smoothies for a week and have some fruit left to snack on and spinach left for salads.  I stuck to the shopping list that I decided on earlier in the week and did not buy any extras.  For $101.13 I got enough meat to last me (I am a single woman after all!) about a month, dried goods that will likely last me a month and fruit for 1-2 weeks.  I would say that is pretty good!!!

When I got home from the grocery store I decided to make my smoothies for the next week and freeze them.  I decided to do this mainly because I had bought raspberries and I didn’t want them to go bad before I could use them!  I really hate buying raspberries only to have them go bad before I could eat them!  So I made 3 different types of smoothies: A strawberry and raspberry green smoothie, and raspberry and blueberry green smoothie, and a strawberry banana green smoothie.  They all tasted great and I can’t wait to drink them all!!!

Before smoothies

After= So much yumminess!!!

Due to a busy weekend that left me with a hangover on Saturday I did not actually start eating clean until Sunday evening.  But man was my Sunday dinner delicious!  I made parmesan crusted tilapia with some sautéed asparagus.

The recipe for the tilapia is as follows:

1 pound of Tilapia (I just went with two fillets since it is just me and that also gave me lunch for Monday!)

1 cup parmesan

1 tablespoon paprika

1 tablespoon thyme

Mix all of the dry ingredients in small pan.  Pat the tilapia dry and dredge through the parmesan mixture. Place tilapia on a baking sheet and bake at 400* for 12 minutes.

Let me tell you this was too yummy for words!

Clean Eating Dinner #2 Bell peppers, onion, garlic, and chicken over brown rice

3-4 chicken tenders

1 Green Bell Pepper

1 Red Bell Pepper

1 Yellow Bell Pepper

1 Orange Bell Pepper

1 medium Onion

3 cloves garlic

1-2 tbs olive oil

1 cup brown rice

Nothing fancy but easy and yummy!  I seasoned the chicken with salt, pepper, and a little bit of cayenne then added it to the pan with my sautéed veggies and just let it simmer with the veggies until it was cooked through.  While the chicken and veggies were simmering I cooked the brown rice then served myself the chicken and veggies over the rice. There was enough for 3 maybe 4 meals!

I haven’t been great this week, but I’ve been better since Saturday.  I hope you all enjoy my recipes and feel free to share any that you have! 🙂

Weekend Update

My weekend pretty much started on Thursday so I’m just gonna start there! 🙂

As I was trying to see clients on Thursday I came across a road block at one school so I decided to take my lunch break and go shopping!  I needed to find a black dress for my Breakfast At Tiffany’s themed birthday brunch and I found a great dress!  I also found a cute romper for my trip to Miami that is still months away but I’ve been having fun shopping for! 🙂

Notice the long hair…

After my lunch break shopping I went and saw a client then had some time down time before my next client so I dropped by my hair salon to see if I could get an appointment with my favorite hair stylist.  When I walked in the receptionist said that if I had the time then he could see me right away!  I have been loving my long hair over the past couple of years but this summer it has been driving me crazy with my running!  It was getting just down right disgusting when I ran and so I decided I wanted to cut it!  I told my stylist that I wanted it short enough not to get completely disgusting when I run, but long enough to still put in a ponytail.  I told him other than that I trusted him to do what he saw fit.  I have to say I love the results…

After work on Thursday I went to my friend Kendrea’s house so that she could film me doing the ALS Ice Bucket Challenge.  If you have not yet done this or been nominated consider yourself nominated!  I have been a supporter of ALS awareness for several years now thanks to Steve Gleason and all of the wonderful work his foundation does.  If you would rather donate than pour a bucket of ice over your head you can donate at or

On Friday I saw more clients, got a manicure and then went to a charity event.  I wanted to have my nails a nice purple for the first weekend of LSU football but the color turned out a little more magenta in my opinion, but I do love magenta! 🙂 I did not take any pictures from the charity even that evening but I will say that we had a great time that night!  The charity is Ween Dreams.  The charity collects Halloween costumes for children who otherwise would not have costumes. After the Ween Dream party I went out with some friends and had a great night out!

Saturday I woke up a bit hungover 🙂  But after drinking a coke, taking some excedrine, and eating some good pizza I was feeling much better and was able to meet my cousin and her husband downtown for a bit and see her precious pregnant self!  Other than going to see my cousin I really just laid low on Saturday.

I ended up taking another week off from running due to pushing myself too hard when I came back last week!  I have two more days before I can run again 😦  Hopefully next week’s recap will include some great running! 🙂  I hope you all have a great week!!!

Time To Start Eating Healthy Again!

So I started a weight loss journey more than 2 years ago and while I am proud of the progress I made I have recently been gaining and never reached my goal.  So as I am preparing to go to Miami in just a few months for a girls weekend I am determined to lose the weight I’ve regained and reaching that initial goal would be pretty awesome too!  So I have decided to get more strict with my clean eating!  I will be starting on Thursday (only because that is my typical grocery shopping day:)).  Below are the foods I will be cutting from my diet and what I will be replacing them with.  Let me know if you have any suggestions for me!

Foods To Cut…

1. Non whole wheat pasta- I will be switching back to whole wheat only

2. Store bought pasta sauces- I will begin making my own sauces again (which honestly I like so much better anyway!)

3. Cokes- Drinking water, one iced coffee in the morning, and green tea only!

4. White rice- finally making the switch to brown rice!

Those are my biggest switches and this is my planed shopping list for Thursday.

1. Organic Chicken

2. Tilapia

3. Lean Ground Turkey

4. Tomatoes

5. Spinach

6. Apples

7. Grapes

8. Bell Peppers

9. Strawberries

10. Raspberries

11. Blueberries

12. Bananas

13. Garlic

14. Onion

15. Lemons

16. Limes

17. Brown Rice

18. Green Tea

19. Oatmeal

20. Asparagus

21. Broccoli

22. Green Beans

This is my first week so I have not put together any fun recipes yet but once I do I will share them with you!

Do you follow a certain diet? If so what do you do and have you had success?

What are your favorite healthy recipes?

Weekend Update

This weekend was a bit busy!  I was originally going to be off all weekend so I could spend Sunday with my sister and her boyfriend going to the Saints first Open Practice since getting back from Training Camp in West Virginia.  Then I found out that I could get there in time even with working so I decided to go ahead and work on Sunday.  Well somehow after I said I would work Sunday after all I ended up being asked to also work on Saturday!!! But even with all the work I was able to get in some great workouts and some fun!

Saturday I had a lazy morning of watching Pretty Little Liars.  I swear I would not usually watch shows like this but I promised one of my clients that I would watch a couple of episodes and then I couldn’t stop!  I’m now almost completely caught up on the show!

Then I went into the hospital for a few hours and helped my friend Tonya with some assessments.  My super awesome boss promised me that he would bring me donuts if I worked on Saturday and they were waiting for me when I got there! So I was treated to a donut which definitely helped me get through the afternoon!

Once I finished up at the hospital I went straight to the gym and ended up doing 2 hours of cardio!  I started out doing 30 minutes on the arc trainer and 30 minutes on the bike, but then I ended up getting drawn into a movie and wanted to finish it so I hit the treadmill for an hour!  I decided I would do my uphill interval workout for 30 minutes then test my calf on running.  I ended up being able to run a mile straight with no pain in my calf and then did some running and walking intervals to finish out the hour.  Running a mile with no pain told me that I could definitely do my training run on Sunday!

Sunday I got up early and did my shift at the hospital before going to The Saints Open Practice!  I got to see all of my favorite players and coaches but was not able to get any autographs.  I’m planning to go again and try to get my jersey signed.

After leaving the practice I went straight to the gym to get in my training run.  My calf got a little sore here and there but nothing terrible and I completed my run so I am happy!  26.2 here I come!!!

Weekend Update

Today I am joining in on running’n’reading’s Weekend Update!

On Friday I was able to see the rest of my clients for the week and get my notes in before 5!  Which was great since I was meeting a date for a run at 6:30!  I have to say that I thought going on a run for a first date was an awesome idea!  And with the guy being a dud, in my opinion, it was great that it was a running date!  He got there early and saw that there was a 2 mile race going on so he signed up and I met him at the finish line.  As we walked to get his race results I quickly realized that he was not my type!  One of my best friends mentioned that I made a quick assessment and I reminded him that I assess people for a living so it doesn’t take me too long 🙂  So since I could immediately tell that this was someone that I would not want to spend an hour and a half talking to I suggested that since he runs at a much faster pace than me he should feel free to run at his own pace and not be held back by me!

My usual running routes are either Audubon Park or a loop along St. Charles and Magazine.  For this run we met at the levee along Lake Pontchartrain.  Before this run I had never done more than 4-5 miles and for this run I did a full 10k!  I definitely took some walking breaks (as my training program dictates) and enjoyed the beautiful sunset on the lake!

It really was a great run!  And I was so proud of myself at the end!

On Saturday I planned to wake up early and hit the gym for some cross training on the bike but I didn’t wake up in time and ended up running late for my other plans for the day too!  I decided a while back that I would do the Red Dress Run for the first time this year.  This was my sister’s 3rd year to do it and she’s been on me to do it since she started!  I will be honest and say that we do not do the run aspect of the run and after my first 6.1 the night before I made sure she knew that I would not even pretend to run on Saturday!  Here are some pictures from Red Dress…

I am clearly excited to be with my awesome sister!

I was violated! 🙂

After a long day hot August day in NOLA!

I hope everyone had a great weekend!  I sadly am going to take a few days off from running 😦  I have had a nagging sore right calf for the past few weeks.  From what I can tell it is just from being a new runner and my calf not being used to all of the running.  I’ve been foam rolling and what not but it’s still being a bit of a nag so I’ve decided to give it a few days to rest after doing 6.1 miles on Friday.  Hoping that I’ll be able to get back out there on Wednesday with no problems!  Let me know if you have any tips! 🙂
